It’s officially summer! Pretty soon, not only will my favorite fruits and veggies be readily available, they’ll be on sale after sale after sale. It’s just one of the blessings of summer. On one of my trips to Walmart last week, I picked up some cake mixes and Outshine® Bars. I’m a bit conservative when it comes to keeping an inventory of snacks in the house but there are certain staple items, especially during the summer! These cupcakes ended up being a sort of dare from my children. We were snacking on some of our Outshine® Bars and the kids asked if I would make some cupcakes later. I suggested chocolate, for no particular reason, and that’s when the accusations went flying! According to the kids, I did not deserve any of the strawberry bars or whatever I was going to make with the strawberry cake mixes. They said, “now you’re not a strawberry superfan!” That’s ridiculous because I’m the superest strawberry super fan. I’d show them! I set out to make the most super fan strawberry cupcakes, ever.
In less than an hour we were eating strawberry cupcakes to the fifth power! As much as I love to cook from scratch, the cake mix came in handy. I prepared the strawberry cake mix according to the directions. While the cupcakes were in the oven, I made the filling. I used 1/2 of a strawberry Outshine® Fruit Bar (melted), 8 ounces of strawberry cream cheese, and 7 large strawberries. That’s it! I set two strawberries aside and blended the rest of the ingredients. I put the filling into a piping bag, inserted the tip into the center of each cupcake. I filled the center slowly until the filling began to overflow onto the top of the cupcakes. I placed fresh strawberry slices onto the filled center, using the 2 strawberries I had reserved, and the Super Fan Strawberry cupcakes were born! If you are a fan, but not a super fan, you can substitute the strawberry cream cheese for regular cream cheese. The melted Outshine® Fruit Bar creates a smooth texture and thins out the filling a little. These were delicious. Make no mistake. I am a strawberry super fan!

- ½ of a strawberry Outshine® Barm (melted)
- 8 ounces of strawberry cream cheese
- 7 fresh strawberries
- Make your favorite cupcakes.
- While they are baking, mix these ingredients together in a blender. (Reserve two strawberries for slicing and topping your cupcakes.)
- Put the mix into a piping bag.
- Fill the center of the cooled cupcakes with the filling until the filling begins to overflow.
- Add a fresh strawberry slice to the top of your cupcake.
