Lately, my older children were coming home from school claiming to be starving! That’s so dramatic, but they really were hungry. Just because I try to have dinner ready before the end of the school day doesn’t mean I want them waiting all day to eat. That’s exactly what was happening. If they don’t like the school lunch, which happens more often than not, they won’t eat until they get home. Between the mental demands of their academic responsibilities and the physical demands of their sports commitments, getting the nutrition they need makes all the difference in their day. I had to take action. I can’t just hope they like lunch that day. Skipping meals is especially unhealthy for children. Plus, it makes them tired, irritable, and puts them in a cognitive fog. I tried making them “bag-lunches” last year, but they still didn’t eat.
I get it. I do. Wilted salad, warm dressing, and squished sandwiches every day don’t exactly inspire good eating habits. Healthy lunch ideas aren’t enough. Your kids have to love the food you give them. It’s not like I’ve just discovered this wisdom. I mean, I knew. But, what else was I supposed to give them? Unless… a refrigerator in their backpacks?

Healthy Lunch Ideas
- When using fresh-cut vegetables, give them something to use as a dip
- Lunches should be visually appealing. I little cilantro on the top, a special “cut,” and colorful LunchBLOX™ ingredients will scream, YUM!
- You must have a treat! It can be sugar-free, low-fat, or no fat, but give them a treat along with lunch.
- For the picky eater, sneak the fruits and veggies into a recipe they already love. (like this Hispanic Chicken Salad recipe below)
- Wet-salads, such as pasta or potato salads with a protein-rich ingredient are a great alternative to a sandwich.
- Attach knock-knock jokes the kits!
Here’s a way to add in EXTRA veggies with my Hispanic Chicken Salad recipe
Ingredients
- 5-6 diced potatoes
- 3 skinless chicken breasts
- 20 oz mixed vegetables
- 2 cups of sour cream
- 2 cups of mayonnaise
- salt & pepper to taste
Typically these are eaten with tostadas and topped with hot sauce. For lunch, you can substitute crackers or just eat the salad a la carte!
Directions
- boil and shred the chicken breasts
- boil and drain the potatoes (potatoes should be tender but not soft)
- boil and drain the veggies
- stir the salt, pepper, mayonnaise, and sour cream into the shredded chicken.
- fold in the potatoes and veggies.
This delicious salad can be served both warm and cold!
