Chorizo and pinto beans (frijoles) are staple items in my household. We usually buy the 20lb bags, and they don’t last very long. That might seems like a year’s supply of beans to some people, but for my family, it goes quickly! The same is true for rice. I can eat beans and rice with dozens of meal combinations. Food and cooking is an important part of my family culture, so I make it a point to cook things my family loves. This is one of the easiest recipes to make, so I decided to bring one of my 6-year-old triplets into the kitchen with me to help with the cooking. All five of my children like to cook with mom, but that can be too many hands in the kitchen. So, cooking with them individually is a great way to spend some quality time. When cooking with them, though, it really has to be a beginner’s meal.

Uncle Ben’s Ready Rice cooks in the microwave in 90 seconds! The bags have COOL TOUCH tabs on each side, so you can safely remove your bag from the microwave, as soon as the rice is done. I was skeptical. I doubted the rice would taste good, and I was worried I’d burn my fingers when I grabbed the tabs. None of this was true. The tabs were actually cool, which I thought was super cool! I wish everything I put in the microwave had that. After my husband’s first bite, during his meal, and about thirty minutes after he finished, he said, “the rice is really good!” Seriously though, this man always complains about food. Then, he makes a point to tell me how good my 90 second rice was? Not once, not twice, but three times?! Whatever!
(I’m not going to lie though, the rice was good! And it took ninety seconds to cook!!!) I began to imagine all the things I (my family) could do with these bags of genius and I was so excited! I love to cook with my family, and to cook for them.
My son had a blast wearing his chef clothes, helping me cook the rice, and plating our creation. We cooked all three flavors I bought; Spanish Style, Garden Vegetable, & Rice Pilaf.
Chorizo & Frijoles Torta
If you don’t have beans cooked already, they’re easy to make! Wash some pinto beans, add them to a pot of boiling water with salt. Cover, simmer, and continue to add water as it evaporates, for about ninety minutes. Done!
For the chorizo, remove the chorizo from it’s casing and cook the same way you brown hamburger. Chorizo will release it’s own oil. Do not drain the oil from the pan. Once the chorizo is cooked, as an equal quantity of your cooked pinto beans and smash the two ingredients together.
Turn off and cook your Uncle Ben’s Ready Rice in the microwave for ninety seconds. Add the chorizo combo to a bolillo or telera bread. (individual bread loaf), add your Spanish Style rice to the side. Top with panela cheese and a pickled jalapeno. YUM! If you already have cooked beans, your entire meal is done in less than ten minutes!

- Cooked Pinto Beans
- Chorizo
- Uncle Ben’s Ready Rice – Spanish Style
- Bread (Bolillo, Telera, or your option)
- Pickled Jalapenos
- Panela Cheese
- Remove Chorizo from it’s casing.
- Cook like hamburger, leaving the grease in the pan. Do not drain.
- Add an equal amount of cooked pinto beans.
- Simmer for about 2 minutes.
- Smash chorizo & beans together until well mixed and smashed.
- Turn off & set for about two minutes.
- Cook your Uncle Ben’s Ready Rice in the microwave, for about 90 seconds.
- Fill a loaf bread with your chorizo & beans.
- Serve with a side of Uncle Ben’s rice, topped with panela cheese and a pickled jalapeno.
