In my house, it’s a rare day when I serve a meal without salsa. We all love a little heat with our food. I love changing the flavor and texture of a meal with a homemade salsa. It makes all the difference. As much as I enjoy a traditional red or green salsa, I also enjoy changing things up a bit, like I did with this jalapeno & avocado based 3-In-1 Dip.

Cooking with different kinds of peppers (chiles) gives our plates that authentic Hispanic flavor. Yesterday, for lunch, I whipped up this delicious Potatoes In Chipotle Sauce dish. I’m not going to lie. My family even ate this with tortillas. Don’t feel obligated to do the same, though. This dish is delicious just the way it is! I used La Morena chipotle peppers in adobo sauce because La Morena products add authentic Latino flavors to traditional Hispanic dishes. They can be found in the Hispanic aisle at Walmart. You’ll be surprised how easy this was to make.

Wash, Peel, & Dice 8 – 10 Potatoes (not too small) Set aside.

Wash, Dice, and Saute 1 Small Onion, 1 Green Pepper, & 1 Red Pepper until the onions are translucent. (Sprinkle with salt before saute.)

Roast 4 roma tomatoes, 1 clove of garlic, 2 dried “Chiles Guajillo,” and 1/4 white onion until tender. Don’t worry about the “burn” on the ingredients. It will add to the flavor and texture.

Add the roasted ingredients to a blender. Add 2 – 3 cups of water (depending on the texture/thickness you want) and salt to taste. Add 2 La Morena Chipotle Peppers in Adobo sauce and about a spoonful of the Adobo Sauce. Blend thoroughly.

Add the sauce to the Green Pepper, Red Pepper, and Onion pan.

The chipotle sauce will look like this.

Add the potatoes and simmer until tender, about 12 – 15 minutes . Stir every few minutes. Do not overcook.

Serve with a sliced avocado and toritallas. (Optional) You can also bake the potatoes and just pour the chipotle sauce over the whole potatoes. Yum!

Potatoes In Chipotle Sauce – Papas En Salsa De Chipotle

Ingredients
  • 8-10 Potatoes
  • 4 Roma Tomatoes
  • 1 Garlic Clove
  • 1/4 White Onion
  • 1 diced White Onion
  • 1 diced Green Pepper
  • 1 diced Red Pepper
  • 2-3 Cups of Water
  • Salt
  • Oil
Instructions
  1. Wash, Peel, & Dice the potatoes. (Set Aside)
  2. Roast the Roma tomatoes, garlic, 1/4 onion, and chiles
  3. Saute the diced green pepper, red pepper, and onion until onions are translucent.
  4. Add the roasted ingredients to the blender.
  5. Add 2-3 cups of water to the blender. Add salt to taste. Blend thoroughly.
  6. Add 2 La Morena Chipotles and about 1 spoonful of the sauce into the blender. Blend thoroughly.
  7. Add the chipotle sauce mix to the sauteed ingredients.
  8. Add the diced potatoes.
  9. Simmer until potatoes are tender. Do not overcook
  10. Serve with sliced avocado and tortillas. (Optional)
