This week has gone by so quickly. I know, it’s only Tuesday, but I’m still feeling like it was just last Tuesday. Although I always tell myself that things will be less hectic when the kids go back to School, I’m probably just fooling myself. It will be just as busy. In fact, in some ways, it will be busier. I don’t mind long days or hard work but when I begin to skip entire meals, it’s usually time for me to slow down. At least, it’s time for me to take a closer look at how to get back on track. I’ve made some really late night trips to Walmart this week, because I just couldn’t manage to get there in the day. Lucky for me, they’re open late! Last night, I needed to get a new mop. My floors need to be washed. Mostly out of habit, I grabbed some milk, too. I was exhausted but decided to look around for some breakfast ideas, because I know I need to get back into the good habit of eating breakfast, if I plan to keep up with the School year. I was all over the place and ended up in the cereal aisle. That’s where I found the NEW Quaker® Real Medleys® Yogurt Cups. I hadn’t seen them before. I decided to grab a few. I thought they sounded like the perfect on-the-go breakfast or snack. You will find them in either the cold or ready-to-eat cereal aisles. Real Medleys is a satisfying and delicious blend of yogurt and multigrain granola with real fruit and crunchy nuts. They’re the first shelf-stable convergence of granola, fruit and yogurt – all in a single serve cup! Just add COLD milk (it won’t activate with warm milk), stir, and eat! Crunchy. Cool. Yum. It’s so convenient.

I tried the Quaker® Real Medleys® Yogurt Cups today and they were delious. They’re certainly appropriate for an on-the-go meal, but I had an idea! During the Summer, I started stuffing fruit all the time. All kinds of fruit with all kinds of yum. I decided to try it with the Yogurt Cups. Since I was eating the Apples & Cinnamon cup, an Apples & Cinnamon bowl sounded perfect. Even though I’ve been known to make some complicated dishes, I also love a 5-Ingredient or less recipe! These stuffed apples only needed four ingredients!

4 Ingredient Stuffed Apples

  • One red OR green apple
  • One Quaker® Real Medleys® Yogurt Cup
  • 3/4 Cup of Milk (this is a little less than called for on the container, but I liked it thicker.)
  • Cinnamon
  • Popsicle Stick (optional)

Mix the cold milk into the Quaker® Real Medleys® Yogurt Cup. Stir. Wash, core, and hollow the inside of an apple. Stuff the Yogurt Cup mixture into the cored apple. Top with a dash (or more) of cinnamon. Insert a popsicle stick into the bottom for the perfect on-the-go breakfast!
