There is a storm coming.
Growing up on the East Coast, I went through some very cold Winters. I’ve experienced below-zero temperatures and furious blizzards. I’ve spent most of my adult life in Northern California. We don’t see that kind of weather here. There’s still some things about Winter that are the same between the two regions. It does get cold. Weather conditions keep people inside and cooking what they have on hand. People stock their homes with their favorite staple items and double check their emergency preparedness kits in case of power outages. A warm meal on a cold winter night is as important as a hot cup of coffee in the morning. See? It’s not that different! I’m actually quite terrified by thunder and lightening, but freezing temperatures and snow storms are less scary to me. I’m about to be terrified. The news is reporting that this week Northern California is going to have it’s worst storm in six years, with wind up to 60 miles per hour! I’m freaking out a little nervous. Last year lighting struck a tree and the tree pulled down a power line which came flying down and whipped across the road just feet in front of me. When the storm hits this week, I’m not leaving the house! California is still in a drought so I welcome the rain, even if it means I’ll have to spend a few days hiding under the covers. As soon as I heard about the storm, I went to Smart and Final to stock up on some things so I’ll be ready to stay put and stay warm. I love the chance to create a new favorite recipe for my family. I know what you’re thinking. You can’t go wrong as long as you follow the recipe, right? Wrong! We’ve all had the experience of making an amazing dish, following the recipe to a “t,” only to have it turn out awful, with no way to salvage it. For those same reasons, this is one of my favorite recipes. It’s so easy to modify as you go and fix for even the pickiest eater! I like my broccoli soup extra cheesy and thick. Pedro likes it thin and extra cheesy. Antonio likes it thick but not too cheesy. Normally, they have to eat what I cook. I’m not running a restaurant here. Still, I love a recipe that lets me make a variety of styles from am single dish, giving me the rare opportunity to please them all!
Add milk and water.

- Roux Base
- Salt
- Water
- Milk
- First Street Shredded Cheddar
- First Street Broccoli Cuts
- First Street Peas & Carrots
- Heat 2 Tablespoons of butter and 3 tablespoons of flour to make the roux. Add more or less depending on how much soup you want to make.
- Slowly stir in one cup of milk.
- Slowly stir in 2 cups of the shredded cheddar.
- Stir in salt plus half milk/half water and cheese until you get the quantity and taste you prefer.
- Once you’ve made your soup, whether it be extra thick or super thin, just add the First Street broccoli cuts plus peas and carrots.
- Simmer until the vegetables are fully heated.
- Serve warm with First Street Honey Ham and Cheddar on a toasted Onion Bagel.
